More Than Just a Cheese Spread


I really like Boursin cheese and crackers. So yummy! A while back they were serving this as samples at Costco and the lady told me two things: 1) The cheese can be frozen and 2)That the cheese was really tasty melted and tossed with pasta. Hmmm. I thought it was worth a try. I melted the cheese and thinned it with a little half and half (milk would be fine too). Then I poured it over about 1 lb of angel hair pasta (next time I will use less pasta). I served it with some chicken cut into strips that I had marinated in olive oil, S&P, garlic, and some Italian dressing and then sauted. I liked the Boursin cheese sauce - it wasn't too heavy - lighter than an alfredo sauce with a little more flavor. The chicken turned out great too but I wouldn't use angel hair again. I started to think of so many other ingredients that could be added - tomatoes, asparagus, sausage, peas (not all together of course). A great thing to remember for a last-minute meal.

When we were on Study Abroad in London my family had boursin, cheese, avacado, and tomatoes on baguettes every Saturday night. I LOVE that stuff. The pasta idea sounds great.

Yum. That sounds good. Never tried that kind of cheese, but I always notice it, as the packaging reminds me of some goat cheese I bought in France. I can never live it down, that goat cheese. It was the best I've ever tasted, spread on the a fresh baguette.
