Famous Wafer Cake



This recipe has been around for a long time but I just recently discovered it last week. I love anything that is easy, beautiful and delicious all at the same time. So I was pretty delighted with this dessert. I found the recipe on the side of the Nabisco Famous Chocolate Wafers box. It can also be found here. Basically, you spread whipped cream between the wafer cookies, forming them into a "log" roll. Spread whipped cream on all sides of the roll and refridgerate for 4-6 hours. The cookies absorb the moisture and turn kind of "cakey" (word? no.). Sliced on an angle, the pieces are striped black and white. Pretty cool. I served mine with chocolate shavings on top (nothing gourmet - just shaved a Hersheys bar with a vegetable peeler) and fresh rasberries. For such little effort - it sure was impressive. And very tasty too!

Oh, the memories of yummy wafer cakes! Next it will be the floating island dessert. I have got to try it here at home. One thing I wanted to tell you I tried this Christmas was roasting chestnuts (but not on an open fire :-)). At Christmas, they used to roast chestnuts in front of the old Clark's Store in downtown Provo and hand them out to customers. I decided to try it this year. They are absolutely delicious. It's like eating a giant pine nut (which you know Dad and I love).
